A pizza-like snack that’s a real Dolenjska (you have to make it)

Do you know what pussies are? You are more likely to nod to this question if you are from Dolenjska or the surrounding area. However, if you come from other parts of Slovenia, you will probably just smile and wonder what it is. Let’s say: pičiči is a very popular dish in Dolenjska pizzerias. They come from El Dorado Pizzeria, which closed last year, and we spoke to him this week Radom Finkwho made the first pizza a few years after opening a pizzeria in Irua Village.

He does not remember the exact date when he baked the first, but he does remember exactly which of the guests who tried the flat plate for the first time and sprinkled it with cheese and oregano excitedly exclaimed: “It’s not pizza, it’s pizza!” And a new dish was born! As it was said, he lived first in the pizzeria El Dorado, and then spread across Dolenjska.

So it was, explains Rado Fink: “We opened the pizzeria in 1994, and a few years later we tested new bakers. I spread the dough on it and sprinkled it with cheese and oregano. So that I wouldn’t get lost, I cut the dish into squares and offered it to the guests sitting at the bar. “

Preparation and service details

He continues: “Then everyone copied the plate, but it was not like our plate anywhere. The dough should be a little thicker and softer, and real cheese should be used.” in your hand and marinate in one piece of sauce. These sauces are an indispensable part of pizza. “We served a sauce on the side, put it on the burger, and it was made with mayonnaise, ketchup and mustard. But, again – here too we have to use the right products to get the taste we’re looking for,” Fink smiles.

The original form of the dish with an interesting name traveled through Dolenjska and saw many variations, adding to the cheese bacon, shallots, ham, oregano, salami, ground beef, grilled chicken, zucchini, pepperoni, sausage, corn and more. “But it’s not pizza anymore — it’s pizza without tomato sauce,” says Fink.

By the way: Similar but much older dishes are known in Gorenjska. In Trži, flika is covered with sour cream and sprinkled with salt and cumin, while they know posmodulja (or posmojevka) near Lake Bled. But neither of them is as widespread as modern Dolenjska’s pussies!

We used a proven pizza recipe for the dish, we added one egg. If you don’t choose to, you can use a few tablespoons of oil or add a little water. Since the pussies are completely dry, the use of sauces is essential, let your imagination run wild when preparing them! You can use mayonnaise mixed with a little ketchup and add a little mustard, as Radu Fink did when he first introduced this dish nearly three decades ago. As we noticed at first glance and also examined in practice, the pussies go well with a cold glass of beer, and if we offer a salad, then lunch is already ahead!

Enough for 2 to 4 people.

  • 500 grams flour
  • 3 dl of lukewarm water
  • 0.5 cubes of fresh yeast (20 g)
  • 1 egg
  • 1 teaspoon of salt

filling

  • A few tablespoons of olive oil
  • 3-4 handfuls of grated cheese, coarse

  • Sauces of your choice (sour cream, tartar, tomatoes, nacho cheese ()

Prepare

1. Crush the yeast in lukewarm water, add 3 or 4 tablespoons of flour and wait 10 minutes.

2. Pour the remaining flour into the bowl. Add salt, eggs and yeast to the rim. Knead well and add a little flour if necessary. Form the dough into a ball and put it back in the bowl. Cover with a tissue and let it rest for half an hour until the dough rises to twice its size.

3. Then divide the dough into two parts, form a ball from each.

4. Preheat the oven with a baking tray to the highest temperature.

5. In the meantime, the loaves grow well and can be rolled up into a circle (like a pizza) and laid out on baking paper. Grease the face with a little olive oil and sprinkle the grated cheese.

6. Bake for 15 minutes. We take it out of the oven, let it cool a little, and cut it into squares. Serve with sauces such as tomato sauce and sour cream.
