Beef soup with chives dumplings, as prepared by an experienced chef

Orshka Avsenik From Gostilna pri Jarmu Prepare bold beef broth by adding all ingredients to cold water, bringing to a boil, reducing heat, and slowly, in a half covered saucepan, simmering for 2 hours. “I never use kohlrabi because it can make the soup bitter. You also have to be careful with the greens, a big piece is enough for a good walnut,” says the experienced chef at the end of the conversation.

“The pot should be covered and the lid tilted slightly so that the soup can breathe,” explains Urška Avsenik, who prefers serving beef stew with a chives pie. It’s made by spreading sour cream over a rolled pasta dough, sprinkling it with a little wheat flour and sprinkling chopped chives on top. We roll it in štrukelj and cut it with the sharp part of the knife, pressing the edges of each štrukeljka, about 2 cm long, together a little more so that the filling does not float on its own. “If we want a clear soup, we cook the strocelli separately, that is, in boiling and salted water. You can also cook it in soup, but it will become cloudy,” adds another tip from the chef at Kropar Inn at Jarm.

Enough for 8 to 10 people.

  • About 1 kg of beef (ribs or side)
  • 2 carrots
  • Parsley (tuber and greens)
  • A slice of green tuber
  • 1 onion
  • 2-3 garlic cloves
  • Marjoram, sage, laurel, chamomile
  • A few grains of pepper and salt


1. Pour cold water into the saucepan and put the washed meat in cold water.

2. Peel the onion and cut it in half. Fry them in a dry frying pan by placing them with the cut part on the pan and heating until well browned. Put the prepared onions with other vegetables, salt and pepper in cold water.

3. Put the pot on the stove and bring it to a boil. Then reduce the heat, let it simmer a little, and simmer for two hours.
