Classic differently: buckwheat pizza

From the 19th century to the present day, pizza has gained constant fans all over the world. Among them is the Associazione vera pizza napoletana, which strives to maintain standards in pizza preparation, such as that the dough should be made only from flour, oil, yeast, salt and water and that the pizza has a diameter of 30 cm.

But it is difficult to limit imagination in preparing dishes, so today we find several versions of the original recipe. Also among them is the buckwheat pizza pizza recipe, made from ordinary buckwheat flour or lime.

components for buckwheat paste: 250 g buckwheat flour (steamed with 350 ml of boiling water or milk), 250 g semi-white wheat flour type 850, 10 g yeast, 8 g salt, 5 g sugar, 2 tablespoons olive oil, 50 ml milk

Buckwheat flour is poured with boiling water, leave the mass to cool. Add yeast, salt and sugar to the cooled mass and knead a smooth dough with milk. Towards the end, add a tablespoon of oil.

Brush the dough with oil and leave to ferment for 20 minutes. It can be left covered in the refrigerator for several hours. Before baking, stretch and roll out, cover and bake at a higher temperature (200-250 degrees) for 8 to 15 minutes.

For additions to pizza, we use peeled tomatoes, fresh tomatoes, different types of cheese, fresh colored peppers, onions, gingerbread, oregano and, if desired, prosciutto or bacon.

Brush the dough with oil and leave to ferment for 20 minutes. It can be left covered in the refrigerator for several hours.

Before baking, stretch and roll out, cover and bake at a higher temperature (200-250 degrees) for 8 to 15 minutes.

Since the buckwheat dough is greenish, we also use color-like additives, such as different types of cheese, fresh peppers, shallots, onions, gingerbread, oregano and many other toppings if desired.
