# Mixed salad recipe with roasted salmon

Ingredients (for two people):

Roasted Salmon Ingredients:

2 fresh salmon fillets

2 tablespoons (olive) oil

1 teaspoon full of spice mix (pepper, pepper, garlic, cumin, salt)

salad Components:

1/4 red pepper (use pepper of any color)

1 piece red onion (or shallot, white onion, green onion ()

1 piece of fresh cucumber

1 bunch of radish

One piece of feta cheese

1/2 avocado

2 tablespoons pine nuts (use any seeds or nuts)

Salad Dressing Ingredients:

90 ml olive oil

30 ml of water

2 tablespoons (apple) vinegar

juice of 1 lemon

1 handful of fresh basil and parsley (or any fresh spice)

1 teaspoon mustard

1/4 teaspoon crushed garlic

1/2 teaspoon salt

pepper pinch


Drizzle salmon with oil, then sprinkle with seasoning mixture, rubbing fillets on all sides of the fillets. Then the fillet is fried in oil and seasoned in a frying pan or grill. Bake for 7 minutes on the skin side and three minutes on the skin side. If you are using skinless fillets, bake the fillets for five minutes on one side and five on the other side.

Mix all decorating ingredients into a creamy layer. If you don’t have a blender, chop the spices fine and then mix all the ingredients by hand in a cup.

Cut the radish and cucumber into rolls and pepper into cubes. Cut the avocado into cubes. Cut the onions into very thin slices.

In a large bowl, whisk together vegetables, peppers, cucumbers, radishes, and onions. We chop the feta cheese, add the avocado and pine nuts, pour on top and mix gently. Serve immediately with a piece of bread.
