Really great pasta in cream sauce with pumpkin and mascarpone cheese

When you only have 30 minutes to prepare a delicious meal, pasta often comes in handy. Choose your favorite shape, cook it on your teeth, then pour over a creamy pumpkin sauce, which will convince with a really rich taste, and awaken children’s appetite with its color. It can be cooked in advance and closed tightly in a glass container for a few days. So lunch will be on the table in minutes.

For the best result in preparing the sauce, we chose mascarpone cream from the Gourmet Green Valley line, which has a light and slightly sour taste and high protein content. It is indispensable in the preparation of sauces, and with it you can season almost all types of desserts. 1. Shake the chopped squash in a saucepan, pour it over the water and add the salt. Cook for about 15 minutes until completely soft.

2. Finely chop the onion and garlic and fry in a deep frying pan, where we will finish the dish later, on a spoonful of butter. When the onion becomes translucent, add 1 tablespoon of tomato concentrate and sauté for another minute or so. Add sweet pepper, stir and turn off the heat.

3. Cut the bacon into cubes and fry crispy. Set aside to use when serving the dish on a plate.

3. Drain the cooked squash and mix it with the fried onions and garlic in a fine puree.

4. Cook the pasta according to the instructions on the package. Before they are completely ready, take 100 ml of the water in which they are cooked.

5. Return the pumpkin puree to the pan, add the pasta water and bring to a boil. Add green valley mascarpone cream, nutmeg, salt and pepper to taste.

6. Shake the drained pasta into the prepared pumpkin sauce and mix well.

7. Divide into plates, sprinkle with crunchy bacon, and chives, and garnish with mounds of mascarpone cream, if desired.
