1.5 liters chicken soup

salt pepper

1 tablespoon tomato paste

2 tablespoons butter

2 garlic cloves

1 teaspoon dried mint

1 teaspoon crushed red pepper

Soak the tarragon in a cup (about 2.5 dl) of the soup base and wait for it to soften (about 20 minutes). Finely chop the garlic. Heat the butter and add the chopped garlic and tomatoes, stir, and when it smells of garlic (make sure the butter is not too hot and the garlic doesn’t turn brown, in which case it turns brown), add salt, pepper, ground pepper and mint and stir constantly. Add the soaked tarragon, toss again and pour over the remaining soup base. Bring the soup to a boil, stirring constantly. When it boils add salt and pepper if needed.
