Spaghetti cult (recipe) – Slovenian news

Pasta is the law, cooked quickly, then poured with the desired sauce, simply tomatoes, meat or vegetables, maybe just with melted butter with a little sage leaves, olive oil, garlic and of course Parmesan. Let your imagination run wild.

For 4 people:
500 grams of spaghetti
To prepare the sauce:
500 grams of tomato puree
3 cups soup base
3 teaspoons olive oil
1 onion
1 green stem
1 carrot
50 grams of bacon
500gm minced beef
2 teaspoons salt
2 peppercorns
pinch of nutmeg
Parmesan cheese
Slowly cook tomato paste and 2 cups of shrimp broth. In another, larger frying pan, heat the oil and fry the finely chopped onion until softened. Add carrots and greens and fry for another minute. Add bacon and stir. We raise the heat, add the meat, stir quickly and fry until the water in the shrimp evaporates. Sprinkle with the remaining broth, season with salt and pepper, and stir. Add the hot mixture and cook for 2 hours, stirring occasionally. Set aside to cool the sauce. Fill a large saucepan with water, add 1 tablespoon of coarsely ground salt and bring to a boil. Add spaghetti and a few drops of olive oil to keep the spaghetti from sticking. Cook according to the instructions on the package. We try the pasta at the end, as it should not boil. Once cooked or on the teeth, set aside, drain, arrange on plates and pour the sauce over. Add grated Parmesan cheese if desired.

Carbonara pasta
For 4 people:
500 grams of spaghetti
To prepare the sauce:
4 egg yolks
1 whole egg
3 tablespoons olive oil
200 grams of bacon
150 gm sheep cheese
2 peppercorns
Parmesan cheese
Fill a large saucepan with water, add 1 tablespoon of coarsely ground salt and bring to a boil. Add spaghetti and cook according to the instructions on the package. Drain the spaghetti and shake it back into the pot. Fry the cut bacon in hot oil in a large skillet until crispy. In a bowl, whisk the yolks and eggs, add the grated cheese, pepper, the cooled bacon, as well as the oil in which the bacon was fried. Shake the spaghetti with the shrimp as the bacon has been roasted and pour the egg mixture over it. Stir and split. Sprinkle with the rest of the cheese and Parmesan cheese, if desired.
