Instead of the classic dough, put in a baking tray a special mass of zucchini, cauliflower, eggs and cheese.
What do we need?
1 tablespoon olive oil
1 onion finely chopped
2 cloves minced garlic
400g canned peeled tomatoes
Freshly ground black pepper
About 1 teaspoon of sugar
1/2 tablespoon red wine vinegar
2 medium sized zucchini
200 gm boiled cauliflower
100gm grated hard cheese
100 gm cherry tomatoes
200 gm shredded mozzarella cheese
Basilica to apply
1. In a small frying pan, slowly fry the onions in the hot oil, add the garlic and saute. Sprinkle with tomatoes and simmer for 20 minutes. Mix the sauce, add salt and pepper, season with sugar and vinegar and cook until thickened.
2. Wash and grate the zucchini. Add a teaspoon of salt, stir and strain. Grind the cooked cauliflower until smooth and mix with the zucchini. Add eggs, cheese and pepper and mix well.
3. Spread the resulting mass evenly in a pizza box or baking dish and bake at 200 ° C for about 20 minutes.
4. Then the dough is covered with a thin layer of tomato sauce, sprinkled with mozzarella and covered with tomato slices. Bake at the same temperature for 15 minutes. Garnish the baked pizza with basil and serve.
